What's everyone's Saturday Six: Thanksgiving Edition?

I'm not hosting and still haven't decided on the alternate veggie, it was to be Ina's Corn Pudding but since it doesn't sound potluck friendly I'll likely do a simple corn pudding and Charlie's colorful veggie casserole since I can't decide.

Today so far is food research day. smileys/smile.gif

 
Why wouldn't it be potluck friendly? We love corn pudding and have it often...although not Ina's

It reheats well and gets eaten over 3 or 4 days. It is a shortcut, box mix base, but oh so yummy!

Creamy Corn Pudding

One 8-oz container sour cream
½ cup unsalted butter, softened
15-oz. can creamed corn
15-oz. can whole kernel corn, drained
8.5 oz pkg cornbread mix (like Jiffy) **see note
½ tsp. salt
few dashes black pepper

Preheat oven to 350 deg. Stir everything together, being sure not to have any big chunks of butter. Pour into a 2 quart casserole dish and bake 55 min. or until it browns on top.

Makes 8-10 servings.

NOTE: you can also use the 15 oz. Krusteaz cornbread mix and add ½ cup buttermilk for the extra liquid.

 
My weekend six

Well I am not into Thanksgiving this year - I was the one that mentioned doing a combined meal with my cousin that has moved up here - like we did last year. But DH suggested this year that we have it at our house. I don't feel like cleaning, decorating and cooking!!!!!!!! But here goes...

1) I have got to get the house cleaned
2) Going to roast turkey wings and necks & make my stock tomorrow
3) Going to make my cranberry relish tomorrow
4) Going to get my grocery shopping done so that all I have to do is pick up my VERY FRESH turkey Monday - they are butchering them Monday morning, talk about fresh - can't wait!!!
5) Need to figure out the rest of the menu - cousin's wife is making a dip and her squash casserole
6) Make cornbread for dressing

 
My Weekend Six

1) We don't celebrate Thanksgiving on my side of the Atlantic, but I remember the decadent dinners from my former life in the US. I might be making a pumpkin pie for next weekend, because I LOVE pumpkin pie. AND it's vegetarian!

2)Today I'm making banana bread. I have a few bananas that are getting old, so banana bread it is.

3)I'm also making a lasagna for DH for next weeek, which will be very busy for me. That way he can have lasagna for dinner while I work my long hours.

4)I'm trying a new dish for dinner today; Stuffed Kabocha squash with quinoa and chickpeas (see link for recipe). I'm really looking forward to it, because it looks so good!

5)I'm starting to feed the wild birds this weekend. It's getting colder here so I want the birds to know that this place will be feeding them through the winter. Last winter was nasty, with 4 months of snow and temperatures down to -37C / -34F. It was freezing!

6) But first, coffee! I always start my day with a coffee latte made of foamed low fat milk and a double espresso. Plain and simple. No sugar, no syrup. Just coffee, and organic milk, and I'm slowly waking up....

grocery shopping for turkey day, done.
pumpkin pie made and frozen, done.
apple cranberry pie made and frozen, done.
cranberry sauce, done.
Chex mix, done.
cheese ball, done.
red cabbage, done. oops, that's 7

we also finally spent a wedding gift card at a kitchen store and decided on a Breville counter top convection oven for use at our cabin. I think it will be handy when it's just the 2 of us.
