Whats on the menu for Fathers day? I was asked to bring

Lemon Blueberry Marble Cakes with lots of tweaks

My father, who doesn't like blueberries, has named this his favor cakes.

Here's how I tweak it:
CAKE: I use 5 extra large egg whites and 2 extra large egg yolks. I also use buttermilk instead of the milk.

BLUEBERRY JAM: I leave out the ginger.

My Filling: 1 Jar of Trader Joe's Lemon Curd mixed with some of the buttercream frosting.

My Buttercream: A mixture of unsalted butter, lemon zest, confectioner's sugar and heavy cream or half-n-half.

Those all sound delicious... I live too far away from my parents to spend

holidays with them, but I made this for my parents once, when they came to visit me when I was teaching in Colorado Springs--it was just down the road 90 minutes for them--and my dad still says it's one of the best things he's ever eaten. smileys/smile.gif (He's also a big blueberry fan.)

It's really an incredible cake. I may have to tackle it again, this summer, since it must be about 11 years since I made it!
