What's your favorite grilled cheese combo? I like a mixture of Gruyere and extra sharp cheddar with

Havarti is one of my favorite all purpose cheeses. Today had some aged havarti and was impressed with the sharpness. My wife likes a grilled cheese as a late night snack and will have to try it tonight.

Cheddar is always good but Gruyere and raclette are hard to beat melted as raclette or fondue.
