we made 90 pounds of sausage all weekend. that's my six. Traca...

that chicken sausage is awesome! we tripled it. did not triple the jalapenos, but used 3 good sized peppers and kept the seeds/innards. plenty spicy and the flavor is just so good. the green from the roasted poblanos is quite nice showing through the casings. next time I will use red jalapenos for a more red/green scheme. we made Bill's family recipe of Italian and also breakfast sausage. whew, now we have to package it all up.

 
Posting my intent worked. I was able to get some Christmas cookie baking done.

Not quite six but I managed the chocolate no-bakes, chocolate revel bars, cranberry-pistachio sugar cookies and chocolate covered cherry cookies. Sent a tray to the xray department yesterday for the weekend crew and another tray today for the day shift. Another tray will go with hubby to the bowling alley tomorrow for his league party.

 
I'm thrilled you liked the sausage Ang. By far my favorite sausage. Sounds like you

all had a productive weekend! I'm slowly but surely moving out of my storage unit and just unearthed my grinder. Looking forward to getting back to more sausage making. smileys/smile.gif

 
Whoa, 90 lbs! You're on a roll Ang! I just love sausages and especially chicken sausage because of

the "typically" lower fat content.

What kind of meat grinder do you have Ang?

 
we have a Sam Baer, which grinds and also stuffs. I think we might need to upgrade though.

we're sure putting that machine through a lot. we bought a "mixer" too, but it's a hand crank and not a model that can be converted to motor. that may be another upgrade if we get more into the sausage making.
