start using it until around March. After opening. I probably should have put it in the frig but I didn't. My question- do I toss it?

Jeez- I've been asking that question alot lately, haven't I?

 
There are people here with lots more knowledge than I, with that in mind....

when I have left an oil on the counter or in the cupboard for what might be too long, I do the smell and taste thing and it's usually pretty obvious. I believe some oils become cloudy if they been too cold? I have stored truffle oil on the shelf before opening for much longer than that and it is still wonderful--with the cost, I seem to always remember to put it in the refer after opening!

 
I've never refrigerated mine. it doesn't get hot here so it hasn't been a problem. you'll know if

it's gone bad.

 
Me either, it's in the cupboard with my other oils. Great on eggs! Tip...

don't cook with it, just drizzle it over something you have already cooked.
