whew- been gone a long time! need cooking time advice

I moved and had no internet (yes I live in the sticks lol) until we got the cellphone going as a modem. I've missed this forum greatly, and constantly feel handicapped by not having the recipes, advice etc at my disposal. Not to mention the great posts that are just plain fun to read smileys/smile.gif

Do any of you happen to know how long I should cook (roast, dry rubbed) a 2.5-3 lb chuck roast at 325 degrees? It's been in for about two hours and I don't know if I should start checking it. Sleeping baby on my shoulder is the main complication here hehe.

I want it totally cooked through, it is destined to be shredded for tacos tonight.

connection on ship--SLOW. but better than nuttin'.

You truly warmed my heart. Baby is great (5.5 months old now!), dinner turned out great, I live in Northern California in the mountains near Tahoe but I'd much rather be in Alaska or Canada smileys/smile.gif

I'll get some pictures loaded to my online account, or I'll try at least ha.

 
we thought it was just the new baby that kept you too occupied. so nice to see you back.

We babysat our neighbor's little one(2 mo old) on Sat while they ran into town(we were at our cabins). DH is very good with the baby, so he had the tyke the whole afternoon. However, his honey-do list did not get checked off, not one item. oh well.

When my babies were at that age I was lucky to get a shower lol

Actually I still am lucky to get dishes done, and every time that I cook or bake it feels like a gift. Homemade cinnamon rolls? Totally from scratch chicken pot pie? I was so grateful to make them that I sent half to my neighbor- felt wrong to keep such a gift to myself.
