Whew!! DONE!! Fifteen pages on jury selection~ I need a dessert to CELEBRATE

Let's see: 4 days of research, did 35 pages in all, then had to cut it back to 15 pages, but I like the results. Topic was: Jury Selection and Racial Bias with History. It was difficult too because I had to site case studies. But I'm done, time to celebrate. I missed my family for 4 days, lived on the computer and at the Law Library at my college. But It's a short Celebration, I have a 12 page paper due on Juvenile Justice: Juveniles Transferred to Adult Prisons.

Chocolate, Lemon, Orange, I'm not picky, something new to celebrate with.

Bottom Layer:
2 cups all purpose flour
3/4 cup confectioner’s sugar
1 cup butter, softened and cut into squares

Top Layer:
4 large eggs
1/3 cup lemon juice
1 tbsp lemon zest
1 1/2 cups granulated sugar
1/4 cup all purpose flour
1 tsp baking powder
More confectioner's sugar for dusting

BOTTOM LAYER: Combine flour and confectioner's sugar in a medium bowl. Cut in butter until mixture resembles fine crumbs and press firmly in ungreased 9 x 13 inch pan. Bake in 350F-oven for about 20 minutes until golden. Remove from oven.

TOP LAYER: Beat eggs in large bowl until frothy. Add lemon juice and zest; stir. Combine granulated sugar, flour, and baking powder in a small bowl; add to egg mixture. Stir until just moistened, then spread evenly over bottom layer. Bake for about 25 minutes or until set. Let stand in pan on wire rack for 5 minutes.

Dust evenly with confectioner's sugar using a sieve; let stand until cool. Cut into 48 bars and enjoy these rich and buttery treats!

 
Or Raspberry Angel "Tort" (Torte)! Rec inside

Easy, but you have to wait 2 hours before eating it...

2 cups raspberries
2 tablespoons sugar
2 tablespoons seedless red raspberry jam, melted
1 (10 1/2 ounce) loaf angel food cake
6 tablespoons amaretto, divided
3/4 cup vanilla yogurt
1/2 cup blueberries
8 teaspoons sliced almonds, toasted

Place first 3 ingredients in a food processor, and pulse 3 times or until coarsely chopped. Set aside.

Line an 8-inch loaf pan with plastic wrap, allowing plastic wrap to extend over the edge of the pan. Cut cake horizontally into 6 thin slices. Place a cake slice in bottom of pan. Brush cake slice with 1 tablespoon amaretto.

Spread 3 tablespoons raspberry mixture over cake slice then top with another cake slice. Repeat layers, ending with cake slice. Cover and chill for 2 hours.

Place a serving plate upside down on top of pan; invert cake onto plate. Combine yogurt and remaining amaretto in a small bowl; stir well. Cut torte crosswise into 8 slices. Dollop 1 1/2 tablespoons yogurt mixture onto each slice and sprinkle with blueberries and almonds.

Ot:: sounds like a real job. Have you ever read Carson McCullers Clock without Hands. Of course, ...

it is fiction but it does contain a bit about
juries in the south. Having done all that research you might like it. That is, if you ever have time to read fiction!!!
