Which Banana Bread recipe do you like? SO many to chose from

I made one that was REALLY good, not NLB's, but I can't remember which one. Mom and dad are visiting and their neighbor is a disabled vet who LOVES banana bread and just happen to have several overripe bananas so I want to make him some and send it back with them tomorrow.

I love both CIs and nlbs for flavor, but neither gives me the deep crack in the top that I love most

THAT comes with my old original Crisco banana bread. I don't have the recipe with me, but this one from Crisco looks close.

I--shamefully--have been known to nosh off the entire crusty top surface and toss the remaining naked loaf in the garbage to hide my transgression.

You are like me Marilyn!

I love the semi-uncooked crack in the middle of banana bread, pound cake, and other loaf cakes! I have been known to take quick breads out before they are fully cooked to have that sort of moist barely cooked seam running down deeper.

Here's my mom's recipe for Banana Bread. Dead simple and very moist.

I gift it during the holidays and keep some in the freezer most of the time. Love it with a smear of cream cheese.

Marcy's Banana Bread

1/2 C butter (1 stick)
1 C sugar
2 eggs
1/2 t salt
3 ripe bananas
2 C flour
1 t baking soda
1/2 C chopped nuts (mom used walnuts)

Pre-heat oven to 350F

Cream butter and sugar by hand; add eggs and beat till mixed well.
Add cut up banana's and mix good. Add flour mixed with salt and soda and beat with a spoon by hand. Add nuts.

Spray pans with Pam. Makes 5 small pans (the foil gift type - this is what I make) or 3 medium small or 1 big loaf size.

Mom doesn't say how long to bake them, I guess because of the sizes, but I'd check them at about 20 mins with a toothpick and work from there.
