This was a first for me: a quick bread made with whole wheat that I actually like. Go figure.
Preheat oven to 350. Grease 4.5 x8.5" bread pan
2.5 C (240 g) whole wheat einkorn flour
1 tsp baking soda
1/2 tsp sea salt
5 TBL (65 g) coconut oil
3 ripe bananas (cut into .5" slices)
1/2 C (105 g) brown sugar
3 large eggs
Heat oil, bananas and sugar for 5 minutes. Let cool, then puree in blender with eggs
Whisk dry ingredients together and hand stir liquids into flour mixture.
Bake 45 minutes.
Marilyn's Notes:
Added 1/2 tsp banana extract, 1/2 C each mini chips and walnuts
Used 3 frozen bananas, let thaw on counter for 30 minutes, drained off most of liquid.
Lined pan with parchment paper rather than greasing it. Lifted right out

Oh! I just noticed that I'm supposed to glaze it with:
1/2 C powdered sugar
2 tsp water
pinch cinnamon
pinch ginger
well...it certainly didn't need that after I added chips.
