Why does my cookie dough dry out in the fridge even though I double wrap? How do you do it?

How do you make cookie dough ahead and not have this happen? I use the Costco plastic wrap and I wrap twice. What am I doing wrong? I have low space in the freezer and some dough changes in there anyway, so I did a make dough day and an all bake day this year, but 2 days and my dough is hard and dried out. How do you do this?

I double wrap with the Costco plastic wrap, put into a ziplock and suck all the air out w/ a straw

I put a layer of moistened paper towels on top of waxed paper in a zip lock bag with dough
