Years ago when I was entering my 'cumin-in- everything' mode I discovered that that as a cooked leftover it made a wonderful patty if mixed with other cooked rice. I just added some chopped cilantro, egg, flour, whatever to make a reasonable patty.
Tonight I had a zucchini that needed using. So I mixed the leftover wild rice, with shredded (salted and drained) zucchini, egg, flour, cumin, coriander. I served the patties with yogurt mixed with lots of chopped cilantro. They were really terrific. Definitely on the can-make-again list and not so tricky that I won't forget.
(Ate them with lamb shoulder chops slowly braised with thinly-sliced lemon and chopped onions as well as a tomato, feta, dill, pomegranate seed salad)
