Catfish?

My suggestion would be, feed the nice catfish nuggets to your dog or cat.

Then, go to the store and buy a nice piece of cod, sole, flounder, monkfish, etc. A little butter, a little garlic, some white wine, a squeeze of lemon, and quick broil.

Sorry, couldn't resist. Catfish makes me queasy. I can't touch it. ; )

 
besides, these are farm-raised and except for an occasional cucumber sandwich...

dined on cod, sole, flounder and monkfish whilst listening to schubert's trout quintet or bass areas.

 
And no doubt, a bit of Wassermusik for added measure. : )

I would say dip those bad boys in garlic butter, roll em' in cornmeal, and fry 'em up. Make them get over their swanky cultured ways. : )

 
Catfish nuggets? Really? What are they?

Raw, I mean, or cooked? Hmm, different anyway. How about fish cakes? I don't like catfish, so I can't really suggest anything unless you broil it, er... them.

hi dawn! raw bits and pieces...

they were great in the gumbo, but i had to buy a pound and a half and was cooking for one (laur's frolicking with our daughter and granddaughter at disney world).

the spinich salad sounds good. if i don't have bleu cheese, i'll make a vinaigrette with my mulberry vinegar.

 
thanks richard, i took your ball and ran with it...

thinly sliced 10 cloves of garlic and sauteed them in 1/4 pound of butter at medium low for an hour until starting to brown. added the juice of a lemon and stirred in the catfish and let it glom for about 10 minutes.

breaded with cornmeal and deepfried.

as there was a good deal of butter left, i reheated it to melt, added about a tsp of peychaud's bitters and tossed the fish in it.

i did like the butter, garlic len and bitters though.
