Will someone please sit my brain down & tell it NO to this: Bacon Gingersnaps

I won't tell you no--I made these last year and they were good. . .

sweet, crispy, bacon-y. I think they could've used more ginger. . . Or at least I made something very similar to these. smileys/smile.gif

any bacon fat. I tried to buy bacon last night, just enough for a couple of sandwiches, and the d*** stuff was $6.99 a pound, and the store had a sign up over the bacon crowing "Regular everyday price!".

As you can tell, I am not a regular bacon buyer. . .even though I love it.

 
Since I just cooked 4# of TJ's bacon ends to make bacon

jelly I have about 24oz. of bacon fat. Wow. Serendipity rules!! Thank you!!

 
I agree, bacon is so expensive...not sure I have ever seen bacon ends and pieces, maybe I just never

noticed them. I always have a list and focus on what I am buying. I never just browse in the store. I should do that sometime. My favorite Raley's closed down, so now I have to go all the way across town to a store that is three times larger. they have everything and so much of it, I have been overwhelmed. I still have not traveled the entire store, never have enough time, because I only go out there when I am on that end of town for a haircut or color appointment.

 
Some stores do sell ends and pieces and they are really

good for seasoning. This package at TJ's is their uncured bacon and applewood smoked. It is SO good, and is great for making the jam. I have laid out pieces and just used for breakfast also. It is thick sliced and all balled up in a package--not laid out like "bacon".
But "ends and pieces" will be very un-uniform, and probably lots of fat. But I've gotten some packages that were quite good. But always good flavor.
