With berries in season now, what are your favorite recipes using berries?

Tons of Blueberry Coffee Cake, Streusel Topped Triple Berry Coffee Cake,

Strawberry Coffee Cake, (the same one as Erin posted above, but with different tweaks), Raspberry Cream Cheese Coffee Cake, Strawberry Quick Bread, Blueberry Muffins (Jordan Marsh copycat), Strawberry Charlotte Russe, Strawberry (or Raspberry) Cream Pie, Raspberry Fool.

Will post any of these recipes if interested. Some are in T&T.

2 thumbs up on this one! I made two double recipes & put in springform pans as Meryl suggested &

they were both eaten in a flash at a dinner I helped cater a couple years ago. I sampled the dregs left on the serving utensil, and this is a delicious recipe!

 
I promised something rhubarb for a work BBQ tomorrow and I believe this will be it. adding some

softened/sweetened rhubarb to the strawberry mix, doubling and in a springform. it should be lovely and somthing different than my normal crisp or slice.

 
I make flavored vinegars

I often use frozen berries but when in season if I can get them at a decent price I use fresh. Raspberry, blackberry, blueberry and sometimes strawberry in that order. I always have at least two types on hand. Once made, let sit for a week or so before using.


FRUIT FLAVORED VINEGAR

Makes about 1 quart
3 cups white vinegar
2 Tbsp honey
16 oz frozen berries (unsweetened) raspberries, blackberries, blueberries, strawberries)
or 4 c fresh

Combine all and bring to boil in a pan over high heat. Remove from heat and let stand, covered, until cool. Strain and discard residue. Bottle and store.

 
And yes, I gained weight.Between the tarts and other French pastries, baguettes, cheese, chocolate,

and wine, I couldn't resist.
