Grill and peel red peppers...(Can use drained and dry canned)
Cut into julienne strips
Heat a dry fry-pan and place one totilla in till warm, about 15 seconds, flip an do other side. Stack these warm tortillas in clean kitchen towel.
Spread 1 warm tortilla with 1 TBL goat cheese. Top with pepper strips. Sprinkle with mint.
Roll up gently and firmly and wrap in plastic wrap securly. Twist ends to secure.
Repeat with remaining wraps.
Refrigerste for an hour.
Cut each wrap into 5 diagonal slices. Discard wrap after cutting.
Serve chilled or room temp.
