Spiced Apple and Pomegranate Pie

Author Notes: Yasmeen, the talented blogger behind one of our favorite cooking blogs, Health Nut, submitted this recipe as part of the FabulousFoods.com Fall Favorites Cooking Club Challenge. We asked Cooking Club participants to cook with favorite fall ingredients, and this cranberry filled cake garnished with fresh pomegranates cake fits the bill beautifully.

Ingredients: For the Pastry

2/3 cup all-purpose flour

3/4 cup whole wheat flour

1 teaspoon ground spices(cinnamon and cloves)

4 tablespoon cold butter,cubed

1 organic egg yolk

1 teaspoon raw sugar for sprinkling on pastry

For the Filling

2 medium apples,peel and sliced

1/2 cup POM Wonderful fresh pomegranate arils

2 tablespoon brown sugar

1 teaspoon ground cinnamon

1 egg white,lightly beaten

Instructions: Make the pastry dough

Sift the flours and spice in to a mixing bowl.Rub in the butter using a fork until the mixture resembles breadcrumbs. Mix the egg yolk with 1/4 cup cold water and add to the flour.Mix to form a soft dough,add few more drops of water if needed.Gather dough in to a small ball;cover and keep in fridge for at least 30 minutes

Roll and bake the pastry

Preheat Oven to 375ºF.Combine sugar and cinnamon ,reserve some for sprinkling and mix the rest with the sliced apples and pomegranate arils.

Roll the dough on baking sheet to make a round about 10 inches round and brush all over with some of the egg white.

Pile the fruit mixture in the middle of the pastry,the draw the edges up over the fruits,leaving the center open. brush the center with some more of the egg white and sprinkle the remaining cinnamon sugar.Sprinkle the raw sugar on the pastry.

bake for 30-35 minutes or until pastry is golden brown and the apples are tender.Slice and serve with dollop of strawberry yogurt,if liked.

ISO Julie in Wa....I plan on making some chocolate pomegranate clusters. What do you mean by

chocolate seizing the pomegranate moisture? Can I just put the pomegranates in the melting chocolate, maybe add some walnuts or peanuts to make a cluster candy???

Marsha, can you still find pomegranates in your local stores? I haven't seen them here in weeks.

 
The melted chocolate sticks much better when you make sure the seeds are dry. I personally...

...haven't had the chocolate seize up on me because of moisture, but it was something somebody suggested to me as a point to be careful of. So just gently dry them off by spreading them out on a towel before adding them to the chocolate.

Melt the chocolate before adding ingredients, rather than adding ingred as the chocolate is melting. The seeds are a bit too fragile to handle being stirred around a lot. Just wait for the chocolate to be melted, then add in the seeds and yes, walnuts or whatever you like. I haven't added anything else in, myself, but it could be interesting. smileys/smile.gif I can't imagine the flavor of peanuts with pomegranate together...

 
So what's going on? Are they only in FL? We had a big run on them a few weeks ago, but now nothing.

 
Are you serious?!!! I don't need them for anything special-I just love them and only had 3 all year!

So, there's no emergency here, but hmmmm - I wonder how much the shipping would be - Of course I would reimburse you for the pomegranates and the shipping. I know if it's under a lb, it's not too bad - after that, everything is ridiculous, unless it's Media.

Pomegranate Frozen Yogurt


Ingredients

2 cups freshly-squeezed pomegranate juice
1+ 1/2 cup plain, whole milk yogurt
2/3 cup Grenadine (pomegranate syrup)
1/2 cup sugar
2 tsp lemon juice
Method

Stir pomegranate juice and sugar over moderate heat until the sugar dissolves. Add lemon juice and let cool to room temperature.
In a bowl, combine yogurt, pomegranate juice and pomegranate syrup and whisk until completely combined.
Chill the mixture thoroughly (3 hours in the freezer works for me), then freeze it in your ice cream machine according to the manufacturer’s instructions. If you don’t have one, here’s how you make ice cream without a machine.

Julie, I made my chocolate pomegrante clusters...Yum...I chopped macadamia nuts and walnuts in the

food processor....then when the chocolate was melted I mixed in the nuts with the pomegrante seeds I had blotted on a towel. Blended all together, dropped by spoonfuls onto cookie sheets and into the freezer.

I just took them out and we're eating them cold. Very nice treat, a surprise when some pomegranate juice pops in your mouth. For that reason I think I'll have to keep them frozen and eat them as a cold candy cluster.
