Wonderful New Years dinner with just me and hubby

list! What a special NYE dinner you had!

 
I made this and was not happy with it. I did follow the recipe

but did not have the large beef bones cut into three pieces. the broth was not right. Once I made the onion soup it was good but not excellent. I had good fresh onions, too. The beef bones were void of any meat, just a bit of fat left on them. I make a much better onion soup using a bottle of good red wine and beef consume. Would the bones cut into the three pieces have made a difference?

 
Soaked them overnight, then cooked slowly with small ham hock. Added an onion, diced carrots and

Celery that I had sautéed in a bit of olive oil. 2 bay leaves(thanks Tess) And 2 cloves of garlic. After about 1 1/2 hours I taste for salt/pepper. Then I add 2 squirts of ketchup. It adds that little something sweet/acid that we like. Cook some more. . For this New Years I added some sliced kale in the last hour. A this and that recipe

 
it was probably over the top foufou for my DH, who prefers plain beans, but I just can't do that
