Wonderful sweet potato rec. even for non-sweet potato lovers

I have been missing a long time. Last time I checked in the group was located at Finer Kitchens, and I even remember Gail's Recipe Swap. I see that most of my favorite cooks are still around. I have been lurking, often coming to read when I could not sleep. Last time I posted we were living in Orlando. Now we live in Gainesville and we are happy a clams here. I have a veggie garden and we are enjoying delicious fresh produce from it.

I have always hated sweet potatoes.Too sweet. Too junked up with marshmallows or whatever. I did not like the smell, taste or texture. Until I happened upon this recipe. I fixed it for TG and fixed it the day after because we ate all of it on Thursday. I hope you enjoy it.

I actually didn't measure the apples very carefully, but . . .

since one cup of apples weighs less than the same volume of sweet potato, as a rough estimate I found out that there is approximately the same amount in volume of apples as there is sweet potato. I basically sliced one long straight sweet potato into slices and sliced one peeled and cored and halved apple into slices and then alternated apple and SP slices. If experimenting, I might try golden delicious apples, but the honey crisp worked well. Since there are only 2 of us, I used 1/2 the weight of SP and 1/2 the amount of aromatic juice. It was perfect.

 
Gail! I just took this out of the oven and tasted it - YUM!!!!!!

I could see tossing in some cranberries before baking, too. Can't wait to serve this tomorrow morning to my ladies smileys/smile.gif
