Last week I bought a bag of mixed summer baby squashes. Long, round, green, yellow, a wonderful mix. Also, a basket of smaller than golf ball size red onions. I peeled a few onions, cut them into four wedges. The zucchini and squashes, I cut into rounds, the same size. Sauteed onions in garlic-infused evoo, then added garlic, and all the veggies. Threw in a few gold, and red cherry tomatoes, salt, pepper, Calabrian chile paste, lemon zest, and juice. OMG, was this amazing.
