wondering why twice now my eggsalad became super runny

is there a trick I'm unaware of? Not that mych celery in it, eggs weren't warm.

Any ideas? I have to drain it after 2 days in order to make a decent sandwich. smileys/frown.gif

Are you using a reduced calorie mayonnaise? They have extra water whipped in. Otherwise,

I would guess the celery. It releases a lot of liquid, and unlike potatoes in potato salad, eggs won't absorb any of it.

 
was thinking maybe it was the celery not a ton of it in there though, not reduced cal mayo thanksJoe

 
I have it happen with potato salad too but I just drain it off. I always make too much potato salad

gallons in fact, and so it sits for a few days.

I've never made a gallon of egg salad nor had to keep it longer than an hour. It's irresistible--if it won't all fit on the sandwich I put the rest on the plate as a dip.

I couldn't leave out the celery in either case.

 
I wonder if the eggs give off water? I boiled 6 eggs, peeled them, and put them in a plastic bag in

the frig, to use whenever. After a day, I noticed that the bag had water in the bottom of it. Since then, I store my peeled eggs wrapped in a paper towel in a plastic bag, and the paper towels absorb a lot of liquid. I often had runny potato salad too, but have not made it since then with paper towel stored eggs.

 
Do you use chopped onion? Runny is usually a combo of things

Onion releases a lot of water. I doubt it is the eggs. Celery releases some water. Sometimes the mayo can "break". If the same jar of mayo was used for both batches that turned runny maybe get a new jar.

I'm with Joe- just drain it off. I do with potato salad. I use chopped green olives in my potato salad and it always makes the mayo break but it is so good I keep doing it over and over again.

 
Right, Janet- I don't think any of us have a problem the same day it is made.

I think we are just speculating why after two days it would be runny.

 
I used both celery and chopped red onion. Probably the length in

the fridge is the problem.
I think I will add the chopped celery and onion as I go.
