I see you and raise you Vegan Beck who saw the CI Vegan chocolate cake recipe

you know..the one that they worked very hard to make tasty and still satisfy the vegan edicts...and the first words out of her email were:

"Do you think it would change it much if I switched the flour to sorghum or barley? I've cut gluten out of my diet."

I think I'll get her a nice candy dish this year.

 
Here is a raw Flourless Chocolate Cake with Rasp sauce ..no sugar, no flour, no milk

Raw food desserts are the perfect guilt-free desserts. These desserts use whole food ingredients such as nuts, dried fruits, and avocados to replace unhealthful white flour, white sugar, and heated fats. But unlike other "lite" desserts, they have so much flavor, you won't feel a bit deprived. And they are so easy to make.

Here are a couple of easy recipes from the book to get you started:

Flourless Chocolate Cake with Raspberry Sauce
Yield: one 5-inch cake, 4 servings

for the cake:

1 1/2 cups raw walnuts
Dash salt
8 pitted medjool dates
1/4 cup unsweetened cocoa or carob powder
1/2 teaspoon vanilla extract
2 teaspoons water

for the raspberry sauce:

1 cup fresh or frozen raspberries (thaw and drain, if frozen)
1/4 cup pitted medjool dates, soaked 30 minutes and drained

Place the walnuts and salt in a food processor fitted with the S blade and process until finely ground. Add the dates, cocoa powder, and vanilla and process until the mixture begins to stick together. Add the water and process briefly.

Transfer to a serving plate and form into a 5-inch round cake. To make the Raspberry Sauce, place the raspberries and dates in a blender and process until smooth. Frost the top of the cake with Raspberry Sauce just before serving.

 
Raw Surprise Filled Pudding Cake ..

Surprise-Filled Pudding Cake

Crust:
3 c. shredded coconut
2 T. coconut oil
1 T. agave
DIRECTIONS: Process until the oil starts to expel and stick to the side. When you are able to form the 'dough' into a ball, then it is perfect to place into oiled (coconut) glass pie pan.

Filling:
3 avocados
3 kiwis
1 pint strawberries
2 T. coconut oil
2-3 T. agave
1 t. lemon juice
¼ t. salt
DIRECTIONS: Process all ingredients in FP until it is smooth and creamy. Fill the pie pan and garnish with fruits and/or shredded coconut. Cover and freeze at least 2 hours or overnight. Be surprised with the such taste!

 
Maybe she can't have things dipped in chocolate? don't know how this fits into veg/kosher.
