wanna play it safe by keeping the cukes separate (salted) then drain and dress at the last minute (or better yet about a half hour or so ahead.

 
Are you adding 'sweet' to the rice wine vinaigrette?

I ask because I've been trying to mimic the cucumber salads that we've had in restaurants, and they tend to have a sweet component along with the rice wine vinegar. But I haven't nail it yet.
