Would eye of round work in Coconut Beef Curry?

I have used rump for the Italian beef you mention and it works just fine and

would be the very lean beef that eye of round is.
I think either recipe would work fine for the eye.

 
Anna, I'm not great with meats so I looked up the location of this cut: per the Internet

"Eye of round steak originates from the beef hindquarter -- a highly-exercised and relatively tough muscle group -- and requires chemical tenderization, a moist-heat cooking environment or mechanical tenderization to achieve palatability. "

I've linked the article so you can compare your recipe to see if it meets some of the criteria needed to tenderize it.

Another link said beef stew meat can be either chuck OR round, so you might be in luck.

is the recipe you are referring to slow cooked with hot and sweet peppers (gardinera)?

It will work well, as I said, and will shred. Be sure to cook it on low and slow. Round is a stew meat and very lean.

 
I have used Eye of Round roast for all sorts of recipes that call for the fatty cut of meat, such as

chuck. It works well, and I love the fact that I do not have hardly any fat to deal with. I dislike eating all that fat, and frankly find the recipe is just as good if not better. They work great in the slow cooker or a Dutch Oven for a long and slow braise type recipe.

 
The Italian sandwiches came out very well with eye of round

The meat cooked on low for about ten hours. When shredded, the meat absorbed back a lot of the broth. Refrigerated overnight and served warmed-up today with provolone on the rolls. and a small bowl of extra broth for dipping. My peckish house guest who eats very little loved it and ate the WHOLE thing. Me too.

A butcher once recommended grilled eye of round as steaks

They need to be marinated but very tasty, tho not fillet mignon tender. But I prefer my meat meaty - sirloin and rib eye are my favorites. Colleen
