Would you bake 15+ lbs of boneless pork butt (2 hunks) overnight at 225 or 250?

We went into a Costco Business Center on the weekend and I couldn't resist the huge package for $1.50 lb. ( At my advanced age, we finally bought a small chest freezer so I am delighted all around!)

Is 225 degrees too low? The two Gretchen-rubbed 8 lb hunks, covered with aluminum will bake all night, probably 9 or 10 hours. Most recipes say 250 degrees.

 
You're shooting for an internal temp, at the center of the roasts of 190 to 205.

Reach that internal target temp and the roasts should fall apart and be meltingly tender.

Either temp will get you there, but it takes a little longer at 225 vs. 250.

You will most likely hit a plateau at around 150 or so, but don't raise the heat. Give it time.

Did it all night (10 hrs) at 235 degrees. Came out beautifully! Yum!

Half straight into the new freezer for a summer supper party later on, some to adult kids with new baby, some for supper for two nights, and will break up the rest into some baggies to freeze for just us to use as needed.
I don't own an instant pot which could shorten the cooking time but wow, could it handle 15 pounds.

 
AWESOME. Kroger has Boston Butts on sale now for $1.47/ lb. Think I'll go get one...

...or two for the BBQ. Too hot for indoor cooking, but the same principles apply. Low and slow...
