Are you aking about panna cotta? It's only one of the best things in the world for dessert!

Shouldn't be gluey at all. For something so simple, it's often ruined, though. Often you

get served a packaged creme caramel-type pudding. It should be light and taste of fresh dairy. One of the best recipes is linked -- exactly like the best stuff in Italy. Try to use a good preferably organic cream rather than supermarket stuff. The taste and texture difference are noticeable.
