Are the ground peanuts necessary? I want to make cookies but not make a trip back to the store. TIA

 
I've never made them without the ground peanuts. It gives a crunchy texture and more...

...peanut flavor. It was one of the tweaks CI used to crank up the final product.

Sorry I'm not more help, but I've never made them without it.

Anna, if you can get your mitts on "blister peanuts" they are amazing in this cookie

I'd never heard of them until Michael posted this recipe and I don't have a Trader Joe's nearby ("they" won't supply to Florida yet, the dirty %@*!). Instead I ordered them from a peanut farm in GA.

I was on WW when I made these cookies and they were worth every point/calorie.

I don't buy the blister peanuts anymore unless I'm making this cookie. I can't stop eating them...

...and I'll finish a whole tub/bag of them in a day.
