I made the cookies using Hershey's Dark Cocoa (because that is what I had onhand) and I rolled the dough into cylinders, wrapped in plastic and stuck it in the fridge over night.
This morning I sliced and baked them (a very quick process). Made the filling (it takes just like the real thing) - and put it into a ziplock, cut off the corner and piped the filling onto 1/2 the cookies.
