youza is it good! I sautéed sliced leeks in butter to start but next time I'll use bacon fat. After it was made and we tasted for seasoning it seemed like it needed a little somethin, somethin but I just didn't know what. I googled it and found so many recipes just the same as yours and it seemed like bacon, cheese, green onions and sour cream where key to it so that is what we did. I swear John was saying WOW about every 30 seconds! I have no idea why I've never been aware of this soup but I'm sure glad I know now. Thanks for the recipe.http://eat.at/swap/forum1/234439_Here's_the_simplest_versioninfinite_possibilities_Baked_Potato_Soup

You're so welcome! Glad you liked it...yes, I like it topped with bacon & cheese too smileys/smile.gif

Yes, kinda. What I'm hung up on is using my mashed taters left

over from turkey day. Those are looser because of butter and heavy cream...yum...but I sure won't hesitate to make this again. I guess the soup wouldn't be as pulpy as it is with just mashed baked potato.

Uh- it works really well. Just be flexible with adding liquids- taste in between additions.
