made the one for dinner and the other one for me the next day. I had too much going on to consider a sauce. just wrapped the brick in heavy foil, cut out the backbone and put salt in the hot skillet. I roasted potatoes like you did with the chicken. just purrfect!
Yum. Sounds like a perfect solution when cooking for two. Richard's sauce is just
a splash of wine or balsamic vinegar, after removing the rosemary, but not the garlic, from the pan. I thought the vinegar would be too strong but it was really good.
I love vinegar in a sauce too. the game hens were so easy to handle I'll probably
make them more often. they cook up so quickly and perfectly and plate beautifully. I did throw too much salt in the pan, next time I'll add just a little bit. I also love the garlic in the pan, to live for!
