for Roasted Chicken with clementines & Arak in Jerusalem which calls for fennel bulbs to be roasted along with all the rest of the ingredients, finished off with parsley as a garnish. I have often questioned why, when fennel bulbs come with beautiful fronds, he does not finish off the dish with those instead of parsley...anyone know why? Perhaps simply his preference to parsley, or a matter of tasted or something else?

I am making this dish again, using blood oranges instead of clementines, for added color, and as usual, I will finish off with the fennel fronds.

Parsley is quite common in middle eastern cooking. Yotam probably likes it, and has the...

...dish tasting enough like fennel without the garnish?

Probably not a pairing everyone would like, however I made slow cooked Rio Zappe beans

the day before. I cut the recipe down to a little under 8 oz of beans for the two of us. On hand, I had Chipotle Whole dried red peppers from Penzeys, and something called Chile New Mexico Entero. Added fresh garlic. And, from suggestion for the recipe finished with a tablespoon of dark brown sugar at the end. When I tasted them from the slow cooker, I thought they were great, but the next day they were awesome. Served with a plate of heirloom tomatoes, multi colored cherry tomatoes drizzled with balsamic glaze and goat cheese. It was a killer meal for me. I did not blast the chicken with the high temps as suggested, but did it slower at 375°. and it came out perfectly.

Another question

Could you substitute aquavit for Pernod/Arak? Would it be to licorice-y?

 
I am not familiar with that product. A quick research said it is flavored with caraway

.I liked the Pernod in this recipe. These types of products have a huge shelf life, so having it for several years is no issue.
