every time I just throw it away. Has anyone used it to make a dressing? It seems it would be delicious since it's a little vinegary and a little sweet and slightly spicy but how? Add a little Dijon to emulsify and whisk in EVOO, salt and pepper?

 
By the way..yoo hoo Eva...you and Cathy Z talked me into doing the

tapas kind of thing. I didn't have much to use up so I just picked up some things. We had:
herb and garlic Chevre
Maytag blue cheese
teeny baby red potatoes steamed, cut in half, salt & pepper and a nice blob of garlic and herb Rondole (did have in fridge)
Elaine's shrimp cocktail
thin slices of salami
a fantastic garlic ciabatta loaf sliced thin
Greek olives and rice stuffed grape leaves
deviled eggs (I made)
Peppadews stuffed with cream cheese
And.....a bottle of Prosecco

Yes, we used it at a restaurant where I worked. Wonderful stirred in pasta, tuna & chicken salads.

The vinegar gives it a nice lift and then there's the spicy kick. So good!
