Yum, a very good dinner. Ham and Scalloped Potatoes, only...

this time, I didn't glaze the spiral ham because I want to use the leftovers in sandwiches and soup. I did baste it liberally with it's juices. When the ham was done, I made the Creamed Onion recipe from my MIL, only I added the thinly sliced Yukon gold potato slices. Before that though, I add the accumulated juices from the ham as part of the liquid to make the cream sauce. That was the key part. Made a nice cream sauce with a little cheese in it, and added the sliced potatoes to it. Put it all in my Le Creuset au gratin casserole (one that made the move) and baked it in a 500 degree oven (I was running very late). Served the ham with the potatoes and a tossed salad, and got a very very good from hub. Lots of leftovers for lunches, dinners and soups. One of the best bargains out there. I only paid $14 dollars for my spiral cut ham from Aldi's. An amazing inexpensive dinner, that was delicious.

Here you go D...

I made the roux a little thicker so I could add the juices from the ham. I also used half-and-half instead of milk. I used sharp cheddar and a little parm (from the green can kind). When I made the creamed onions for Tday, I used Pioneer Woman's Onion Straw recipe for the fried onions called for. Here is the link for those. They are to die for!
