Internal Temperature for Baked Goods

This is from the Thermapen website. I LOVE my Thermapen and have been using the same one since 2010. it's the only way I achieve accurate temps for my caramel candy. My pen is accurate to within 0.7 degrees, so I'm very confident with it. Not sure how other brands would compare to this level of accuracy.

I love my Thermapen too. I alerted them when I saw a misprint for one w both the pen and infrared light for temperature. It was ridiculously low like six dollars or something and they let me buy it for that price because I was so nice to let them know the ad was wrong. I’ve had it for years with no problem I finally did have to replace the battery once.
