Process 20 grams of freeze-dried fruit in 1/4 cup sugar until you have a smooth fruit powder.

Add 2 cups of heavy cream to food process with fruit powder and process for 15 seconds. Scrap down and process for another 15-30 seconds until thick and whipped. Use immediately or store in airtight container in refrigerator for up to 5 DAYS!

I would SERIOUSLY taste the TJ freeze-dried raspberries after grinding before adding them to the whipping cream. They used to be sweet but for the past several years, the ones from Trader Joe's have been very bitter. And, brain cells dying as we speak, I forgot this myself and added a few powdered teaspoons to the strawberry Noosa frozen yogurt I was processing in my ice cream maker. Totally messed up the taste...I had to add agave to mitigate the bitterness and hope that will bring it back to edible.

Oh good to know! I used it several times in icing in the past. I’ll be sure to taste first now. Thank you!
