Adding freeze-dried fruit to whipped cream

Process 20 grams of freeze-dried fruit in 1/4 cup sugar until you have a smooth fruit powder.

Add 2 cups of heavy cream to food process with fruit powder and process for 15 seconds. Scrap down and process for another 15-30 seconds until thick and whipped. Use immediately or store in airtight container in refrigerator for up to 5 DAYS!

Huh. stabilizes whipped cream! Who knew? I like to add it to icing. The strawberry ones from Trader Joe’s blends up to a pretty pink to fill cake layers.
