? about Mark & Joyce's Crispy Lemon Cookies

I made those cookies once too, and had the same problem.....

Well, I think the problem was the same. Mine were a little greasy and chewy, but I've had that happen to a couple of other cookies, so I'm sure it's not the recipe.

I always called it the cookie grinch, and he comes to visit at the most inopportune time!

I do think it has something to do with the butter.

1) Don't let the butter get too soft before using it. I take mine out of the fridge about 15 minutes before I want to use it. (Of course I live in temperate, 80-90º degree weather all the time. Not sure how warm your house is, so you might be able to leave it out longer smileys/smile.gif

2) Don't overcream the butter and sugar. I do think it's possible to overcream, so stop when the butter and sugar are homogenous.

I hope it works. Maybe I'll try that recipe again too.

 
How long you leave them on them on the pan also makes a difference.

The faster you remove them to cool, the crisper they will be.

I probably overcreamed the butter/sugar - had the little ones helping. I scoot the parchments onto the kitchen table to cool so I'm not sure if I could've moved them any sooner. Mine came out greasy too.

DH suggested I put a glaze on them so reamed a lemon and added some powdered sugar. You get a little pucker when you eat them which the folks at his work loved. After sitting for several days they've gotten too delicate to handle w/out breaking up so we'll just eat the rest w/ a spoon smileys/smile.gif
