Alfredo Sauce (stupidly simple)

I've been looking for a good alfredo sauce for ages, but mine never turn out good. However, I think I finally found a good one. It's from Epicurious--I forget the name of the original recipe, but I extracted the directions for the sauce. So here goes:

Alfredo Sauce

2 cups parmesan cheese (I used grated)

1 2/3 cups whipping cream

Whisk together over low heat. Stir constantly until smooth.

That's it! I was afraid the grated cheese would make it grainy, but I just kept stirring and it became very smooth.

 
I ask because I've had horrible results with fresh parmesan - it doesn't meld...

I end up with these gloppy lumps that refuse to blend in, even though I heat gently and stir constantly. Not only am I bread-challenged, I guess I'm alfredo-challenged!
