Report from today's luncheon on the Mexican icebox cake for 40

I made 4 times the recipe and filled one 12x15 pan and one 9x13. I never found ladyfingers so I used graham crackers which worked perfectly. Each piece was exactly the size of one cracker square, so it was easy to portion out, it was about 2" high.
I cut it into portions then froze it for 2 hours before plating. It was put on the table at the start of the luncheon, so it sat out about 30 min. before being eaten and was pefect! Freezes beautifully by the way smileys/smile.gif
Thank you all for helping! Now to make red velvet cake balls for 2 teas next week!
