RECIPE: Amish Baked Oatmeal

There's a farm somewhere in GA where folks WAIT IN LINE to have breakfast, with Baked Oatmeal being the favorite dish. So a few years back I tried Smitten Kitchen's Baked Oatmeal.

It wasn't good.

But I recently saw an Amish cookbook at the grocery store and snapped a photo of their baked oatmeal.
Here's their recipe:
1/3 C oil
1/2 C sugar
1 large egg, beaten
1.5 tsp baking powder
1/2 tsp salt
3/4 C milk
2 C quick oats

Mix and pour into greased 9x5 bread pan. Bake at 350 for 25-30 minutes.

But...that's NOT what I used. I used their idea, but changed things up based on reading several comments on NYTimes.

Here's what I used:
1/4 C oil
1/3 C brown sugar
1 large egg, beaten
1.5 tsp baking powder
1/2 tsp salt
1 C chocolate almond milk
2 C quick oats
1/4 tsp cinnamon
1/4 tsp vanilla

The comments from NYTimes had mentioned most recipes were too sweet plus I wanted it a bit thicker in order to drizzle on chocolate almond milk. This turned out perfect at 25 minutes. I sliced it up for Mom and served it with bananas and yogurt. She's had it three days in a row and she HATES breakfast. Plus, no major chewing involved.
 
Thanks for posting, Marilyn! This looks interesting. I think I'll give it a try. I have cookie butter almond milk creamer I need to use up, will mix with regular milk.
