REC: Pumpkin Cake with Cream Cheese Frosting -- my own T&T -- YUM!!

Pumpkin Cake

2 c. flour
1 c. sugar
1 c. brown sugar
2 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. salt
dash nutmeg
4 eggs
1 c. oil
2 c. pumpkin

Mix dry ingredients. Add wet ingredients. Grease and flour a 9x13” pan (or cupcake liners). Bake at 350 for 40 min. (about 15 min. for cupcakes). After they cool, frost with cream cheese frosting, sprinkle with a little cinnamon sugar - it really makes a difference somehow!.



Cream Cheese Frosting

8 oz. cream cheese
1 stick butter
3 c. powdered sugar
1 tsp. vanilla

Blend together until smooth and creamy.

I also hesitate, as I am sooo not into cakey cookies. But I just might try it.....

It was kinda funny. I made a batch of cakey banana chocolate chip cookies, and they were okay, but not one of my favorites.

I took it to work, and offered it to one of the girls. She took a bite, and just stopped. You could tell from her face that she didn't really like it, and didn't know what to do with it.

I had to laugh, then gave her permission to throw it out smileys/smile.gif

Oh well, that's why we have to do all the cookie testing before Christmas!!!

 
Rec: Pumpkin Chocolate Chip Muffins...Just made these recently when

I had a half can of pumpkin left over and wanted to use it up. I can't give credit to who it came from. I just did a google and didn't make a note from where I got it. Hubby loves them!

Pumpkin Chocolate Chip Muffins
(Serves 12)

These muffins taste better the next day, so are a good make-ahead muffin.

1 2/3 cups flour
1 cup granulated sugar
1 tsp baking soda
1/2 tsp baking powder
1 1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ground cloves
3/4 tsp. mace
(may substitute pumpkin pie spice for individual spices)
1/4 tsp salt
1 cup canned pumpkin
2 eggs
1/2 cup butter - melted
1/2 cup sliced almonds
6 ounces chocolate chips

Preheat oven to 350 degrees.

Put almonds on a baking sheet or pie pan and bake about 5 min., just until lightly browned.

Grease 12 cup muffin pan or line with muffin papers.

Thoroughly mix flour, sugar, spice, baking soda, baking powder, and salt in a large bowl. Break eggs into another bowl. Add pumpkin and butter to eggs and whisk until well blended. Stir in chocolate chips and almonds. Pour over dry ingredients and fold in just until moistened. Do not over mix. Scoop into tins and bake 20-25 minutes. Do not over-bake. Test with toothpick. They should still seem a little underdone when removed from the oven.
