Anyone a bunch of Q's for A's...1, anyone have suggestions for acc. in Cornwall/Devon ,farms sound

2...bought 2 fresh "troll King Salmon" the fishman had them in fresh and I couldn't resist...but..

forgot to ask where they are from?...??...and the price for 2 were 10,2LBS, and cost a mere $117.00
Is this a good price does anyone think?...we will use bones, skin for stock and plank one side on the braai tomorrow.
DH's birthday and he loves seafood.... sushimi especially ...we like it all ways so the menu will be
New Zealand mussels on the half shell, broiled with garlic, wine, crumbs, etc
Planked salmon,
Sushimi and salad...the strawberry one.
With his high blood pressure we are trying to eat sensibly and this, fortunately, is his favourite food....now what should I make for dessert....
more sushimi, I guess.

I have bought some premade crepes that the grand-sprogs will do...just reheat and serve with cinnamon sugar and lemon juice and plain vanilla ice cream. The ones we get here from Holland are so good. Hardly worth the hassel of making them myself.

3..anyone tried the rasberry chipotle premade sauce...looks appealing, don't know if I should get it

4......And a super recipe for a salad with strawberries...YUM...REC>>

from a dear friend, it has deff. become a family favourite
Shell's Spinach Strawberry Salad

2 bunches of spinach (or a pre washed bag)
1 pkg. slivered almonds, toasted
2 cups of strawberries

Dressing

juice from 2-3 lemons
1/2 cup white sugar(don't add it all at the same time, do it to taste) I use about 1/3 cup sugar.
beat well together

Beat together
2 egg yolks and 3/4 cup veg. oil
add to the lemon juice mixture

Toss all together and then
let it stand for awhile to meld the flavours...Just yummay!

Joanie, do you mean the Bronco Bob's or Fischer/Wieser Raspberry Chipotle sauce? DH makes

a delicious salad dressing for mixed baby greens and fruit such as mango or peaches/nectarines from it. The sauce by itself is sweet and spicy, but really good with ham, etc.

yes and yes joanie

apricots would die and go to heaven in rumtopf.

and i've tried at least 2 commercial raspberry chipotle sauce that are really good. for the most part i avoid commercial products cuz they just don't taste good, but this is clearly an exception to my taste.

I'll ask him tomorrow, but it was similar to this dressing...he just used oil, red w vinegar and the

sauce to taste. I'll ask him tomorrow.

Raspberry Vinaigrette Salad Dressing: (We personally prefer to make this recipe below without any oil, although the “bite” of the dressing is much stronger this way. Sometimes we add 2 Tbsp of extra-virgin olive oil.) We like thin slices of watermelon on top of baby greens (roasted vegetables, bacon bits and/or croutons are also a nice addition) for an elegant look and great sweet/hot taste for a salad using this dressing.
2 Tbsp. olive oil
1/2 cup rice wine or rice vinegar
2/3 cup Bronco Bob’s Roasted Raspberry Chipotle Sauce
Mix and pour over roasted vegetables or salad greens.

We've started using the Spectrum Naturals organic white and red wine vinegars, really nice vinegars.

Hi, I'm home and will post about my job soon. I tried a bottle of Raspberry Chipole sauce from

the market and it was wonderful. Used it to broil salmon and as dipping sauce for some roast chicken. Here is a link from Epi right now that looks interesting. I would like to use it at work, but the little bottles are spendy and I get a really good raspberry jam in quanity.
Good to be home and check in,
More Later, I promise,
Nan

It's great to see you Nan, welcome home!! Would love to hear about your

adventures at sea...the cooking and the ship and the destinations. When you have time of course. In the meantime I imagine you'll be enjoying the great Alaskan weather this time of year.

ooooH! sublime...DH planked 2 sides of this salmon..one with, one w/out the rasberry chipolte sauce.

the second one with the sauce was so divine, it was the best....the 1st side was a little over done for everyone...'cept me...the second side was perfect for everyone...'cept me...I obviously like my fish more "solid" than everyone else.
What I did was to rinse and plank each side and then on the one I did a thin complete 'wash' of the chipotle/rasberry sauce.....Boy, the flavour was good.
Menu...very fishy!! very salmony!! but then that's the preferred meal of the birthday boy:
snacks...rice crackers with cream cheese and smoked salmon and chives.....Pim's no 1

starter...broiled New Zealand Mussels with garlic herb butter, white wine and bread crumbs....

fresh sushimi tuna slices and tuna tarter set on a bed of the seaweed, pickled ginger, wasabi balls etc

Main...planked salmon, salad with baby greens, avocado and walnuts and garlic vinegrette and cauliflower with cashew nut curry butter ..which was, incidently, extremely good!!!

Dessert...
cinnamon sugar and lemon juice crepes, 3 flavours of ice cream and a "vanilla pudding " made by the 8 year old grand sprog from scratch, as she said...she read up in the "How to Cook Everything" cookbook...came upon this dessert that has no wheat as her Mum seems to have a wheat allergy...and proceeded to make this custard entirely on her own, it didn't curdle or go lumpy...turned out fantasticly well....
(Just that DH can't stand custard BUT don't mention it, he ate quite a good sized helping and fairly enjoyed it)...we loved the pudding!
Lots of rose and red wine too...good family evening!

love to hear of the trip, Nan.....

can't believe the time went by so fast!

The sauce is about the best bought bottled sauce ever...

Please tell me if you think the salmon is expensive...we worked out it is about $25.00 a whole side of salmon...here a side from the regular supermarket would cost about $45.00 so I think it was a good deal...it is supposedly wild Atlantic, but I haven't verified it yet.
