Anyone experienced in sizing up recipes? I need some help in determining if

I am thinking this through properly.

I plan to use the recipe for Warm Walnut Browning Pudding for a dinner I am doing in January. My dessert cook will be making the recipe but I want to make this easy on her, as much as possible.

The original recipe makes 8-10 in an 8 x 8 pan. Knowing how baking proportions go, I think the best thing to do is to make the recipe 3 times, baking each double batch in a 9 x13 pan or those large foil roaster pans. Do you all concur with this?
