Savoury Mediterranean Biscotti from Evelyn/Athens-I made this with a few tweaks awhile ago-very good

SAVOURY MEDITERRANEAN BISCOTTI

"Good to serve along with a glass of wine."

2 eggs
2 tablespoons sugar
1/3 cup olive oil
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cracked black pepper
1 teaspoon dried basil
1 teaspoon dried oregano (preferably greek)
3/4 cup grated parmesan cheese
1/4 cup finely chopped sun-dried tomatoes
1/4 cup finely chopped kalamata olives

In large bowl, beat eggs and sugar.
Add olive oil until smooth.
In bowl, combine flour, baking powder, salt, pepper and basil and oregano.
Stir dry ingredients into egg mixture until blended.
Stir in cheese, sun-dried tomatoes and olives and combine thoroughly.
Divide dough into 2 pieces and shape each into a log about 10 inches long.
Place on parchment-lined cookie sheet and flatten tops slightly.
Bake in preheated 325°F oven for 30 minutes or until pale golden and not quite firm to the touch.
Remove from oven and let cool on baking sheet for 3 minutes.
Transfer to cutting board and slice into 1/2 inch diagonal slices with serrated knife.
Place pieces on baking sheet and return to 325°F oven for 20 to 25 minutes or until firm and dry. Turn over partway through cooking time.
Cool on rack.
Makes about 3 dozen.
Store in airtight container.

I knew one once. Former steel worker who was elected to the PA House of Rep. He was so

disappointed in the rampant governmental graft that he refused to run again when his 2-year term was over.

 
I was approached a few years back to run for City Council. Our councilman had worked...

...extensively with the neighborhood association and he was not running for re-election.

I had lunch with him and told him I had been asked if I would consider a run for his seat. He encouraged me to run if I had great desire to enter politics (I didn't). He said that to get anything done in your council district you had to "play ball" with the other council members. That meant voting for things I didn't believe in, and supporting projects in other districts that I would never support in my own.

He said you can fight it, but you'll never get anywhere with your own projects because no one will support you.

Nice, huh? Politics is truly, truly a DIRTY BUSINESS. No thanks.

I was the lucky recipient of a packet of these, in humid Hawaii, and they remained crisp and

absolutely delicous for the week I was there. Highly recommended. they keep very well.

 
there are several threads with great spiced nuts--union station bar nuts, black pepper almonds, etc.

 
ok, so that was ONE.... bound to be one or two that gets through... not surprising he didn't last!
