Anyone making something new or T&T for Memorial Day?

Rec: Cola Braised Pork...I would love for you to try this T&T Curious. It's delicious!

COLA-BRAISED PORK

1 tablespoon vegetable oil
2 pounds boneless country-style pork ribs, excess fat trimmed, cut into 1 1/2- to 2-inch cubes
2 cups cola (do not use diet cola)
6 garlic cloves, minced
3 tablespoons soy sauce
2 tablespoons chopped peeled fresh ginger
1 bunch green onions, chopped

Heat oil in large pot over high heat. Add half of pork; sauté until brown on all sides, about 8 minutes. Transfer pork to bowl. Repeat with remaining pork. Return pork to pot. Turn off heat and pour cola slowly into pot. Bring to boil. Reduce heat to medium-low, cover, and simmer 30 minutes. Add garlic, soy sauce, ginger, and half of green onions. Cover and simmer until pork is tender, about 50 minutes longer. Uncover and simmer until sauce is slightly thickened, about 10 minutes. Season stew with salt and pepper. Transfer to bowl; sprinkle with remaining green onions.

Serve the pork over steamed white rice.

Makes 4 servings.

My Notes: I don't simmer for the 10 minutes at the end to thicken. I thicken with a slurry.

woohoo! My citrus vodka is steeping on the counter. so easy.

I tried cutting long strips of zest from around the lemon and orange. It looks so pretty in the bottle. I found a vodka one up from the bottom in price range here that has the prettiest bottle. So there it sits and I must be patient. I actually don't drink much vodka, but a lemon drop made with this would be very nice.

 
I'm not really a vodka drinker either but... there is something about this one, straight from the

freezer, on a warm summer evening, sitting on the deck watching the whales feeding...... oh, it's lovely.

just be sure not to have too much because it does bite your butt when you least expect it '-))

 
Hi orchid - perfect timing! I made this tonite!

I had cut up some pork last night to make Sandra in Oz's Chile Verde, but only needed a portion of it. I was looking for a recipe to use the rest of the pork with, so this was it.

I kinda screwed it up - I used a low sodium soy sauce, so when I tasted it after the first 30 minutes, it seemed to bland. So then I got the bottle of regular soy suace, and wanted just a splash. Oops, ended up with a big splash of regular soy, so it was a touch too salty.

I did reduce the liquid at the end, and it got nice and glaze-y.

Glad you tried it Sandi. I've never done it with low salt soy but it is now a

new addition to my pantry. (low salt diet now) The recipe does say to season with salt if needed at the end but I've never had to do that with full sodium soy. It's a nice dish isn't it?
