hosting a dinner for 30 disabled people tonight. The menu was some sort of scallops on fettuccini. THE COOK JUST CANCELLED and they called me to come up and fill in! I don't know what's there for pots and pans. I know there's only one oven and I think a 4 burner electric stove. They have the scallops and the noodles. The freezer has lots of frozen vegetables. There's nothing fresh available but onions! They're doing a salad and bread, which they have. I need something easy.I can use some of my pantry items. I can't get there until 2 and the dinner is at 5.

Is this a "Dinner Impossible" or can I, with your help, pull it off?

 
maybe a veggie soup with the veggies...

(use a canned broth), salad, french bread and some nice but easy pasta dish?

i've found that crushed tomatoes make the quickest good sauce.

 
This is not an exact recipe Cyn

but if you can get your hands on some clam juice or even chicken broth in a pinch. Saute the onions, garlic until translucent, add the scallops and parsley with a little sherry or dry white wine, broth (it should be a little soup, so the noodles can absorb the flavor of the broth)add the cooked noodles, and feta or blue cheese, until it is melted. Salt and pepper to taste.
I have made this and it is easy and delicious. You can just do it at the last minute. I am sure there are some other way more qualified people than me here who can help you out. Good luck!!!

 
I'm starting to panic. Just sauteed 4 huge onions and some garlic in olive oil so now I have to use

that, too.

I also have fresh herbs available.

This is the first one I looked at and it sounds easy and good so I thinkk this is it. Questions:

If I drain the humongus amount of onion and garlic I've cooked in olive oil, think I can use it?
I've also been told "no alcolol" can I sub chicken broth for white wine?

This is a very quick and simple Scallop dish that can be prepared within 20 minutes. Don't be fooled, the flavors will have them thinking you have been slaving for hours.

Proceed with caution: References to ingredient amounts, cooking times, and temperatures in directions have NOT been adjusted (only the amounts in the ingredients list were updated).
10 lbs fresh sea scallops, cut into quarters
10 tablespoons butter
2 1/2 cups white wine
10 tablespoons fresh lemon juice
10 tablespoons fresh chives (chopped)
1 1/4 teaspoons garlic salt
10 cloves garlic (minced)
5/8 teaspoon white pepper
5 lbs angel hair pasta (cooked according to package directions)
5 tablespoons fresh parsley (chopped)

Rinse scallops in cold water, drain.
Add butter to large skillet and melt over low heat.
Add Scallops& cook over medium high heat 5 to 6 minutes, stirring constantly.
Remove scallops using a slotted spoon and set aside.
Add wine, lemon juice and chives to skillet.
Cook over medium heat 2 minutes, stirring occasionally.
Add garlic salt, garlic& pepper.
Remove from heat.
To serve, spoon sauce over drained pasta, spoon scallops over sauce and sprinkle with parsley.

 
Yes, you can sub chicken broth for the wine. Use low sodium if possible, otherwise, reduce the salt.

 
Cyn, don't panic. Scallops,pasta,onions,garlic. It's all good, just as is.

I personally wouldn't get too fancy with blue cheese or feta with this group. They might not be used to those flavors. Keep it simple and they'll love it.

 
Yes, I would add the onion and garlic, at least some of it , and lots of the fresh herbs.
