Baked Eggs & Stuff (for smileys/bigeyes.gif from Frugal Gourmet through a circuitous route. My SIL served this over the weekend. Made with 2 lbs of sauteed mushrooms and a chopped onion (no added spices) it was fantastic: light, tangy and tasty. We cut the amount of cheese; and in deference to my desire to be a healthy 90-year-old I'd probably use egg substitutes or lots of egg whites. I also wonder if all that melted butter is necessary.

This could be made the night before and baked the next morning, but why? It's so quick, all you'd need to do in advance is the stuff.

This dish can be themed. For example: add salsa and chili powder to the eggs and use shredded mexican cheese (jack, chihuahua, and so on) for Mexican version. Add ham and serve with hollandaise for a Benedict version. Add curry powder and avoid beef for an Indian variation.

10 eggs

1/2 c. butter, melted

1/2 c. flour

1 t. baking powder

1/4 t. salt

1 lb. large curd cottage cheese

4 oz. shredded cheese, such as jack or cheddar

1-3 c. flavorings (stuff): minced ham, sauteed mushrooms and onions, chopped

garlicky spinach, etc.

4 oz. shredded cheese, such as jack or cheddar

Whip eggs till foamy.

Add rest but 4 oz. cheese.

Pour into greased 9x13" pan.

Top with cheese.

Bake at 400F for 15 min.

Then bake at 350F till browned, 35-40 min more.
