Besides (more) steamed vegetables, what can I have as a side dish with stir-fry

chicken (mandarin orange stir-fry chicken, to be exact). Bread doesn't seem to go with the rice, many vegetables in with the stir-fry, soup or salad just doesn't seem right.

Company coming Sunday afternoon, just thought I should "fancy" it up a little. Maybe nothing, except dessert?

Great idea! Here is my favorite - REC: Spicy Cucumber Salad

You can skip the peanuts, or change to suit - this is a Thai-style recipe.

Spicy Cucumber Salad:

Dressing:
2/3 cup white vinegar
2/3 cup brown sugar
1/2 teaspoon salt
2 - 4 serrano chiles, minced

In a medium saucepan, combine the vinegar, sugar and salt. Simmer over medium heat, stirring, just until the sugar dissolves. Add the chiles. Pour dressing into a medium bowl and let cool.

Cucumber Salad:
4 English cucumbers, peeled, halved lengthwise, thinly sliced (I don't peel them)
1/2 cup cilantro, finely chopped
4 tablespoons basil, finely chopped
2/3 cup dry roasted peanuts, chopped (optional)

Add cucumbers to the dressing and toss. Stir in cilantro and basil. Mound in a serving platter, sprinkle with peanuts, serve.

Make the dressing ahead, but don't assemble the salad until just before serving, or it will get mushy.

Now that I read it over again "Is" sounds so wrong-What was I thinking? Was thinking that "idea" is

singular, etc.... Convoluted thinking. Just proves I shouldn't second-guess myself. Plus, I should get enough sleep. Twilight Zone, anyone?
