Many have too much mayo and maybe not enough salt. Could
be as simple as that.  Add a little lime juice (very little) to the mayo dressing is a nice little touch.  Broccoli florets (I like to blanch them--or use frozen and thawed), celery, halved grape tomatoes, a little chopped cuke, celery and spring onions, chopped red and green bell peppers..  I don't care for sliced black olives, but most seem to have some. Enough mayo to bind it together and not make it swim in dressing.
