Breakfast 911

here is the text... about quesadillas...

Pat, I make these kind of quesadillas often and they are quick and handy. When my sons have friends over, I make a bunch of these, slice them w/ a pizza cutter and put them out with salsa and sour cream. The kids just love them and they are so easy to make (taste so good too!)

I also scramble an egg is a small frying in pan (keep it together like a mini omellette). The diameter of the cooked egg fits on the tortilla. So, soften tortilla on another frying pan, slide the cooked egg on to it, sprinkle w/ cheese, put another tortilla on top, and flip over. These I serve for breakfast and the kids like ketchup with them.

 
Mmmm, love the scrambled egg idea. Have done that with breakfast

burritos...so good. Sometimes I saute some onion first and maybe mushrooms then scramble the egg and add some cheese. Sausage, ham or cooked bacon are nice additions too.

I've found the quesadillas to be perfect for a camping breakfast too.

 
p.s. if you haven't had them I recommend adding the alfalfa sprouts and sliced tomato to

the quesadilla, especially when using the sharp cheddar cheese. Really nice.

 
I make a super quick breakfast burrito by scambling salsa into the eggs before

cooking - I love TJs Salsa Autentica.

I've also grown smitten with Guerrero's Whole Wheat flour tortillas....mmmmm
