And in an update, those goat people actually got the city to revise its policy on goats! Now people can have them in their backyards, as long as they are disease-free and micro-chipped. I would still shoot goats on sight though.

 
Technically, they are the same species as Swiss chard, which is easier to come by.

Though the beet greens do have their own "beety" flavor, I think.

 
There is a wonderful real farm stand on the RI/MA border called 4 Town Farms. They have a bushel

basket next to the cash register and cut off the beet greens at the request of customers. Always an armful to take away free. Boy I miss that place! Try chopping up the roasted baby beets and adding them to the cooked greens with a little hot vinegar. Heaven.

 
Goat curry is actually quite delicious...just be sure and remove/crush/discard the microchip first.

 
I have to blanch it first, before sauteeing, baking or whatever. I call it "TEETH SQUEEK."

At the garden you visited, we are planning a Swiss Chard class next weekend. You better believe I will have a cauldron going--all my recipes require a preliminary blanching.
